China has been cultivating tea for over 5,000 years. From the misty mountains of Fujian to the ancient highlands, each region produces teas with distinct character. This guide covers the 8 essential Chinese teas — what they taste like, how to brew them, and where to buy them online.
Origin: West Lake, Hangzhou · Type: Green · Flavor: Chestnut-sweet, umami, jade-green liquor
Longjing is China's most celebrated green tea. The flat-pressed leaves are hand-roasted in woks, producing a brew that's sweet, nutty, and incredibly smooth. The best Longjing comes from the West Lake area and is harvested before the spring rains (pre-rain / 明前).
Brewing: 80°C, 2-3 min, 3-4 infusions
Origin: High mountain regions · Type: Dark (Fermented) · Flavor: Earthy, dried fruit, leather, sweet wood
Pu-erh is unique — it's the only tea that improves with age. This 10-year-old cake has developed deep complexity. Pu-erh is pressed into cakes (bing) and can be stored for decades. It's prized in Chinese culture for aiding digestion and is often enjoyed after heavy meals.
Brewing: 95-100°C, rinse first, 15-30 sec steeps, 8-15 infusions
Origin: Anxi, Fujian · Type: Oolong · Flavor: Toasted grain, orchid, honey-sweet finish
Named after the Buddhist goddess of mercy, Tieguanyin is one of China's most beloved oolong teas. The charcoal roast gives it a richer, more complex character than modern light-roast styles. The tightly rolled leaves unfurl dramatically in your cup.
Brewing: 95-100°C, 30-60 sec, 6-8 infusions
Origin: Wuyi Mountains, Fujian · Type: Oolong (Rock) · Flavor: Roasted chestnut, stone fruit, mineral sweetness
Da Hong Pao (Big Red Robe) is the most legendary tea in China. The original mother trees on Wuyi's cliff faces are priceless national treasures. The rocky soil gives this tea its famous "rock rhyme" (yanyun) — a mineral complexity no other tea can match.
Brewing: 95-100°C, 20-40 sec, 8-10 infusions
Origin: Fuding, Fujian · Type: White · Flavor: Honeysuckle, melon, hay, naturally sweet
White tea is the least processed of all tea types — simply withered and dried. This preserves the highest antioxidant content and produces a delicate, naturally sweet brew. Bai Mudan has the lowest caffeine, making it perfect for evening.
Brewing: 80-85°C, 3-5 min, 3-5 infusions
Origin: Wuyi Mountains, Fujian · Type: Black (Smoked) · Flavor: Campfire, dried longan, dark chocolate
This is where all black tea began. Invented in the 17th century in Wuyi, Lapsang Souchong is pine-smoked over longan wood. The result is bold, smoky, and surprisingly smooth. It's the ancestor of English breakfast tea — but far more complex.
Brewing: 90-95°C, 3-5 min, 3-5 infusions. Excellent with milk.
Origin: Fuzhou, Fujian · Type: Green (Scented) · Flavor: Intense jasmine, sweet green tea base
Hand-rolled green tea pearls scented seven times with fresh jasmine blossoms picked at night. Each pearl unfurls into a complete leaf bud in your cup. The seven-scenting process takes over a month — most commercial jasmine tea is scented only once or twice.
Brewing: 80-85°C, 2-3 min, 3-4 infusions. Watch the pearls unfurl!
Origin: Uji, Kyoto · Type: Green (Shade-grown) · Flavor: Intense umami, marine sweetness, deep green
Not Chinese, but too important to leave out. Gyokuro is shade-grown for 20 days before harvest, producing the highest L-theanine content of any tea. The result is an intensely umami, sweet brew that promotes calm focus. Brew at just 60°C to unlock its magic.
Brewing: 55-60°C, 2-3 min, 3-4 infusions
